Peanut Butter, Raspberry Jam & Cream Cheese Sandwich

Peanut Butter, Raspberry Jam & Cream Cheese Sandwich | Living Healthy in Seattle

Ahh peanut butter.

My favorite food.

I’ve probably eaten more peanut butter than… anyone?

As in Costco sized tubs of the stuff have a lifespan of about 4 weeks in my kitchen (if they’re lucky).

I don’t care if it’s creamy or crunchy, but there HAS to be salt involved.

Added sugar and oil is not okay. Just peanuts. And salt.

Peanut butter snob much? Yeah, definitely.

Did you know that peanut butter goes with just about anything?

Peanut butter plopped on a stack of hot pancakes with a drizzle of pure maple syrup = bliss

Peanut butter tossed with noodles, coconut milk, fresh veggies and red pepper flakes = divine

Peanut butter spread on slices of juicy pear = addictive

Peanut butter spooned on top of vanilla bean ice cream = heaven

I can go on…

You’ve probably enjoyed one or a thousand PB&J sandwiches in your life, unless you’re allergic to peanuts.

If that’s the case I am very, very sorry.

PB&J’s are pretty much as good as it gets. I mean, salty peanut butter and sweet jelly (jam in my case) sandwiched between two slices of soft bread. Yes.

But… what happens when you introduce tangy cream cheese to this classic? Magic happens, that’s what.

Before you make a weird scrunched up face and exclaim “blaghh!” Just try it.

Trust me.

P.S. Whole grain bread is necessary.

Yes-! These are known as “Princess Peanut Butter Sandwiches” at my house. My kids all loved them while growing up.
