I don’t normally eat much of a lunch.

There’s usually just a bit of snackage going on.

Some type of fresh fruit and then avocado toast (please do jump on the bandwagon if you haven’t already) or graham crackers with peanut butter a couple hours later. It must run in the family.

My mom and grandma don’t eat much of a lunch either.

Is that weird? Probably, but I don’t really care because often times snacks are more exciting than full-blown meals.

Like these Perfect Deviled Eggs. Okay nothing is perfect, but these are pretty darn close.

They’re full of flavor and a healthy source of protein. Plus, they’re kind of cute, right?

Vegan mayo makes these puppies a tad bit healthier than the standard version. Afraid of vegan mayo? Don’t be! I actually prefer it. If you’re the stubborn sort feel free to use the regular stuff. I can relate, to the stubbornness that is.

Do yourself a favor and be sure to add the chives though! They add a nice pop of freshness.
