My last post did not include even a teaspoon of cheese!

Before you start to wonder if the world is in fact ending, let me remind you that there was a bunch of sugar going on.

Sugar and cheese.

Cheese and sugar.

Life just wouldn’t be the same without those two.

And a quesadilla is not a quesadilla without the cheese.

Let me rephrase that…

A quesadilla is most definitely not a quesadilla without lots and lots of cheese. Monterey Jack cheese in this case, because it melts so beautifully.

Although, you can surely throw some veggies in there and go for moderation. Let’s choose pumpkin puree, since it’s fall.

Why not use whole wheat tortillas while you’re at it?

Wait a second, the scale is starting to tip way in the healthy direction, so it’s totally acceptable to use a little butter, for crispy golden perfection.

But let’s not get ahead of ourselves.

Sweet caramelized onions, black beans and earthy ground cumin add a whole bunch of flavor and make this cheesy situation a meal.

P.S. Top it all off with creamy avocado. Duh.

P.P.S. If you must garnish everything, fresh cilantro is a nice choice.

P.P.P.S. Let your cheese ooze out on that hot pan. Crispy cheese always wins.
