Vegetarian Lasagna with Spinach & Artichokes

Vegetarian Lasagna with Spinach & Artichokes | Living Healthy in Seattle

There is something comforting about digging into a mammoth portion of cheesy, piping hot lasagna.

You watch the steam gracefully escape upward off your first forkful and pray that the irresistible molten cheese won’t burn your mouth, even though you know it will.

But it’s so worth it… at least at first.

Shortly after inhaling your entire plate of lasagna, much like a ravenous Golden Retriever, you begin to regret the fact that a greasy mass of past deliciousness will now be residing in your stomach. Ugh.

Now would be the time to introduce this lighter, healthier version. Don’t worry! It’s still just as tasty, if not more so. Yes, there are four cheeses involved, and yes roasted garlic makes pretty much everything better.

Whole wheat noodles, veggies and reduced fat cheese team up for the win this time around.

So go ahead and singe your taste buds on something that’s both mouthwatering and good for you.
